Lucy's Gluten-Free Cookies Review

I was so excited to get a chance to try Lucy's Gluten-Free Cookies! I took these to my sister's house and we split them among six people and needless to say, they were gone within minutes. They were so delicious and we couldn't even tell they were gluten-free and vegan. We wanted to do something different and "summer-y" for our End of Summer get together so we decided to make homemade ice cream sandwiches with them!

All you need is Lucy's Gluten-Free Cookies (I highly recommend the chocolate), ice-cream, and chocolate chips or sprinkles. Put a scoop of ice cream in between two cookies and roll the edges of the ice cream in the sprinkles or chocolate chips! They taste the best if you throw them in the freezer and let the ice cream harden a bit. Of course we chose the hottest day of the summer to do this and we were impatient so we didn't let the ice cream harden all the way but they were still drippingly delicious anyway! The kids really, really enjoyed them.

Pros:

  • Gluten-Free
  • Vegan
  • All-natural
  • Non-GMO
  • Zero trans-fat
  • Zero cholesterol
  • Taste amazing

Cons:

  • The nearest store that carries these is 25 miles away from me.

I'm going to buy some more because these would make an AWESOME gluten-free substitute for graham crackers when making s'mores and they even have the chocolate built in already! But I really can't wait to try all of the flavors of Lucy's Gluten-Free Cookies.
